En respuesta al crecimiento del consumo de grasas y aceites vegetales, la empresa de estudio se ha propuesto alcanzar una meta mensual de producto terminado, específicamente en el área de margarinas. Sin embargo, la falta de suministro de grasa, especialmente en el proceso de interesterificación de aceites, ha sido un obstáculo para alcanzar los objetivos propuestos.
Este trabajo de grado tiene como objetivo proponer una mejora a la eficiencia del proceso de interesterificación, en el cual se realiza un diagnóstico del estado actual, identificando oportunidades a través de herramientas y datos proporcionados por la empresa. Se proponen alternativas respaldadas por herramientas de Lean Manufacturing y de tipo gerencial, con el objetivo de indicar cuáles son las más viables y beneficiosas para la eficiencia global del proceso.

Abstract
In response to the growth in the consumption of vegetable fats and oils, the company under study has proposed to reach a monthly goal of finished product, specifically in the margarine area. However, the lack of fat supply, especially in the process of interesterification of oils, has been an obstacle to achieve the proposed objectives.
The objective of this degree work is to propose an improvement in the efficiency of the interesterification process, in which a diagnosis of the current state is made, identifying opportunities through tools and data provided by the company. Alternatives supported by Lean Manufacturing and managerial tools are proposed, with the objective of indicating which are the most viable and beneficial for the overall efficiency of the process.
