For this, concepts such as eating, food and nutrition are addressed, starting from the understanding of these as complex phenomena, highlighting the importance of developing intervention models in nutrition focused on health and not on disease. For the above, this work elaborates a synthesis of the history of human feeding, giving a significant role to metabolism and homeostasis, emphasizing the importance of separating from anthropocentric visions. On the other hand, it makes an important review of the interaction between elements such as food, genetics, epigenetics, symbolic experiences, nutritional dark matter and phenotypic plasticity.
